I would be lying if I said that I actually enjoy eating cabbage. In fact, I make it a point to avoid coleslaw and many other things that have cabbage because I flat out hate cabbage. However, I do enjoy egg rolls, but you know, fried foods are not good for you and all so I tend to rarely eat egg rolls.
So I was wondering what I could do this year for a cabbage recipe on New Year’s Day because it’s supposed to bring luck and wealth and let’s face it – I could use both of those! So I started experimenting with recipes to create a tomato-based soup that would hide the taste of cabbage. That is what this recipe does! I love this recipe because it doesn’t taste like cabbage AT ALL. Sure, there is a lot of cabbage in it, but the tomato, sausage, and rice kind of hide all of that cabbagy taste.

Unwrapped Cabbage Roll Soup
This recipe will feed your entire family and leave you wanting more. The fire-roasted tomatoes give this soup a kick. Try it out for yourself and enjoy!
Instructions
Chop onions, celery, and smoked sausage.
Chop cabbage into small strips.
Brown onions and celery in pot for 5 minutes or until golden brown.
Add in sausage and brown sausage for about 5 minutes.
Add the chopped cabbage and 2 tbsp water and stir until combined. Continue to stir. Let the cabbage cook for about 10-15 minutes or until soft.
Add the fire roasted tomatoes, tomato sauce, and petite diced tomatoes. Stir.
Add in seasonings. Cover. Cook for 30 minutes on medium-low heat.
Add in 1/2 cup of brown rice. Cook an additional 30 minutes.
