Sweet Potato & Black Bean Quinoa

Sweet potatoes are in season right now, which means my local grocery store had them on sale for really cheap. Because I am a bargain shopper, I often pick up food with a good sale price. Plus, sweet potatoes are one of my favorite items to cook with. While I typically make things like sweet potato casserole, pie, or baked sweet potatoes, I like to change things up and that is where this recipe comes in.

Quinoa is such a versatile food and can be added to a variety of dishes. Here you have sweet potato and black beans with quinoa. I just love the flavor that these three bring together with the spices in here such as thyme and rosemary.

  1. In a medium sized pot, saute the diced onions and celery in the olive oil for about 5 minutes until slightly brown.
  2. Dice the sweet potatoes and add to the pot. Add the thyme, garlic powder, allspice, and 1/4 cup water.
  3. Cook on medium heat for about 10 minutes.
  4. Add 2 cups low sodium chicken broth, 1 cup quinoa, 1 can of black beans that have been drained and rinsed, 1 tbsp brown sugar, salt, and pepper to pot.
  5. Increase the heat to high and bring to a boil. Once it is boiling, lower heat to medium and cover. Simmer for 20 minutes stirring occasionally.
  6. Once the 20 minutes has passed, turn off the heat. Stir the mixture and then cover the pot again. Leave covered for 5 minutes. Serve and enjoy!
