This easy sweet potato recipe takes only 15 minutes to cook tender and soft baked potatoes. You won’t ever go back to making them the old way of baking them in the oven after you try this once!
If you know how to bake a sweet potato in the oven, it isn’t hard. You wrap it in aluminum foil and wait an hour or more for tender, delicious sweet potatoes. But if you are like the rest of the world and don’t have time to wait on that for your meal because you have a busy life, this is an alternative way to bake sweet potatoes but in only 15 minutes!
You’ll need a sweet potato (I used 4 because I have a family). Put them on a microwave safe plate and place in the microwave for 5 minute intervals until you reach 15 minutes. The reason you put them in the microwave in 5 minute intervals is because you have to rotate the side that is up every 5 minutes. That gives the sweet potatoes equal timing on every side to cook.
So I put all four of mine on the same plate.
To let the inside of the potatoes cook, take a fork and puncture holes around each potato before placing in the microwave.
Once you puncture the holes, place the sweet potatoes in the microwave for 5 minutes at a time. After every 5 minutes, rotate the potatoes until you have all sides of the potato have been cooked and the potato is soft to touch.
Cut the potato in half and use 1 tsp of butter and 1 tsp of brown sugar. That’s all you need in the sweet potato is done!

- 4 sweet potatoes
- 1 tsp brown sugar per sweet potato
- 1 tsp butter per sweet potato
- Puncture sweet potatoes with fork around the sweet potatoes.
- Place in microwave for 5 minute intervals (3x). Rotate the potato on different sides until all sides have been baked – this is 3 turns.
- Take out of microwave and cut down the middle. Top with the butter and brown sugar. Enjoy
