I used to work at a restaurant in the heart of New Orleans where we had this amazing dish with pesto, green apples, and chicken. I remember the first time that I ate it, I fell in love. There was nothing that tasted better to me than that dish. I was only a teenager at the time, and now they don’t serve this dish anymore. So I’ve since created my own version of this recipe. I know you’re probably skeptical because there are apples and chicken with pesto, but trust me when I say that it is DELICIOUS. Granny Smith Apple & Chicken Pesto
This recipe combines the tastes of cilantro, parsley, mozzarella cheese, granny smith apples, and baked chicken all into one dish. The flavor combination is DELICIOUS.
Instructions
Season chicken with salt, pepper, and other spices to taste. Bake in oven at 350 degrees for 35-40 minutes, or until done.
Chop up the fresh parsley and cilantro. Measure out the correct amount. Add to food processor.
Add minced garlic, salt, and pepper to food processor.

Add in 1/2 cup of shredded mozzarella cheese. Blend.
Add the lemon juice and olive oil to food processor. Blend.
Chop one granny smith apple into tiny pieces. Mix the pesto mixture with the granny smith apples.
Place in a bowl and keep in refrigerator until chicken is done. Chop up the chicken and let cool for about 4-5 minutes. Add to the pesto mixture.
Cool for 30 minutes. Serve with toasted chips. Enjoy!
