Spinach & Ricotta Stuffed Manicotti with Grilled Chicken
This recipe mixes grilled chicken, marinara sauce, and manicotti pasta stuffed with a ricotta cheese and spinach mixture.

  1. Preheat oven to 350 degrees F.
  2. Boil water. Put pasta in boiling water and cook until tender. Drain water and place to side.
  3. Cook tomato sauce, petite diced tomatoes, 1 Tbsp Basil, 1 Tbsp Parsley, 1 teaspoon garlic powder, 1 teaspoon pepper, 1 Tbsp sugar, and 1 tsp olive oil together for 15-20 minutes to make marinara sauce.
  4. While the sauce is cooking, grill your chicken. Season the chicken with 2 teaspoons paprika, 1 tsp salt, 1 tsp season all, and 1 Tbsp poultry seasonings. Grill the chicken until done. This will vary depending on how thick your chicken is, but the inside should not be pink.
  5. Make the stuffing for the manicotti. Combine  1 – 8 oz container of ricotta cheese, 1 cup mozzarella cheese, 2 eggs, 1 tsp pepper, 1/2 tsp salt, and 1/2 cup packed spinach. Mix until spread evenly.
  6. Stuff the manicotti pasta with the ricotta stuffing. Place in a 8 x 13 inch glass pan. Top with grilled chicken and cover with marinara sauce.
  7. Bake in preheated oven for 15-20 minutes. Enjoy!
