Combine the eggs, milk, salt, 1 tsp pepper, and paprika until mixed well.
Mix the whole wheat flour, white flour, and 1 Tbsp pepper together.
Spray baking sheet with canola oil spray. Dip the diced chicken into the egg batter first and then into the flour mixture in batches of 7-8 pieces of chicken.
Place on prepared bake sheet and spray the chicken with the canola oil spray before placing in oven. Bake in preheated oven for 15-16 minutes, or until golden brown.
Take out of oven and let cool for 1-2 minutes. Enjoy!
