This week I was given A LOT of squash from a family member, and I had to use them for something. I know the latest trend is to substitute noodles for veggies, so here is a burrito bowl with squash “noodles.” By doing this, you are definitely lowering the caloric count of the meal!

Enjoy the taste of a burrito without the calories from eating one! This mix has black beans, corn, tomatoes, and squash noodles.

Instructions
  1. Cut chicken into cubes. Add taco seasoning to the chicken. Pan sear chicken until completely cooked through.
  2. Rinse off squash. Use spiralizer to make the "noodles."
  3. Add the "noodles," corn, black beans, and tomatoes into pot with seasonings.
  4. Add in the can of water. Cook for 15-20 minutes.
  5. Add cooked chicken to pot. Cook an additional 5-10 minutes.
  6. Serve and enjoy.
